How Many “Bits” Do I Need - 8, 12, or 14?

The debate over how many image format “bits” are needed for great photography is frequently discussed in the Nikonians forums ever since the introduction of digital cameras. Your camera usually offers 8-, 12-, or 14-its. Which should you choose?
